Paleo Mayo Recipe

Directions for the Paleo Mayo Recipe:
- 1 egg, room temperature
- 2 TBS lemon juice or apple cider vinegar
- 1/2 tsp salt
- 1/2 tsp dry mustard
- 1 cup light olive oil
(avocado, almond, and walnut oil also work well)
In a bowl (if using an immersion blender) or a blender, place the egg and lemon juice, letting them come to room temperature.
Then add salt and mustard… blend the ingredients.
While blending, very slowly add the oil — this step is key if you want the consistency of mayo.
I find that it is messy to use an immersion blender. You can buy a large bottle very inexpensive at Costco.
